Green Goddess Dressing
 

 

A healthy variation on the traditional green goddess dressing, the light green color looks great over a variety of Fall Winter lettuce greens.

1/4 mayonnaise
1/4 cup plain yogurt
1-tablespoon tarragon vinegar
2 tablespoons each chopped parsley chives and tarragon
1 minced garlic clove
Combine 1/4 mayonnaise (or substitute with 4 oz. silken tofu) with 1/4 cup plain yogurt in a blender. Add 1-tablespoon tarragon vinegar, 2 tablespoons each chopped parsley chives and tarragon and 1 minced garlic clove. Whir until smooth. Season with salt and pepper. Serve over a bowl of freshly harvested Fall Winter lettuce mix.
