Purple Bush Bean with Roasted Red Pepper Mayonnaise
The spectacular purple color of these beans fades to a deep green when cooked. Try this lovely dipping sauce, which makes a nice color contrast.

Drop Purple Bush beans into a kettle of boiling salted water, cook 3 minutes or until tender. Drain and rinse under cold water. Mix together 1/2 cup homemade mayonnaise with 2 cloves crushed minced garlic, juice from 1 lemon and 1 large roasted red pepper, finely chopped. Season with a pinch of cayenne pepper. Serve on the side or drizzled over cooked beans.
