Sun Dried Tomatoes and Basil
Homegrown oven dried tomatoes are packed with abundant flavor, ideal for pizzas and sauces.
Slice tomatoes in half lengthwise. Remove the seeds and meat from the seed cavity. Sprinkle lightly with salt and place cut side down to drain for an hour. Transfer to a lightly oiled baking tray and bake in a slow oven set at 150°. Let the tomatoes dry until they have a leathery texture, at least 8 hours and up to 16 hours. About halfway through baking, turn them over. Do not rush the baking by increasing the oven temperature, or the tomatoes may burn.

Sweet and meaty, these oversized up to 5" long and 3" across plum-shaped tomatoes will keep you well supplied with thick, creamy tomato sauce. For fire-roasted tomato sauce, first heat your grill, then run to your garden and pick your tomatoes. After cutting the tomatoes in half, grill them over coals until the skins are blackened. For the sauce, mix with olive oil, fresh basil and thyme.Indeterminate. 80 days to harvest.
