Sweet Roasted Scallions
Serve these sweet roasted scallions as a side or over arugula or spinach salad topped with slivers of Parmesan cheese.

Preheat oven to 400°. Slice a dozen bunching scallions into 1/2" slices and toss with 4 tbsp olive oil, 1 tbsp balsamic vinegar and 1 tbsp chopped fresh rosemary. Place in a baking dish with a few tbsp water, cover and bake for 30 minutes. Uncover, stir and continue baking until scallions are browned around the edges, about 15 minutes more.
