Vegetable Sushi w/ Gem Garnish
 

 

The tart lemon flavor of Marigold Gem adds zest to sushi and other delicate foods.


1-cup sushi rice
2 cups water
2 tablespoons rice wine vinegar
Nori seaweed (available in specialty food stores)
Cucumber
Carrots
Marigold Gem Mix
Rinse 1-cup sushi rice several times in cold water, then cover with 2 cups water and bring to a boil over medium heat. Simmer until water is completely absorbed. Cool and mix with 2 tablespoons rice wine vinegar. On a flat surface, set out a single piece of Nori seaweed (available in specialty food stores). Spread with a thin layer of the cooked rice, place a thin strip of sliced cucumber and carrots. Starting from one side, roll into a tight tube. Moisten the end with water to seal and set aside until ready to slice and serve. Garnish with Marigold Gem Mix.
