- Wrap 2 heads of garlic in foil and bake in a 400° oven for 45 minutes to an hour, until soft.
- Unwrap, and cut the top of the garlic head with scissors and gently squeeze out the soft, roasted garlic interior.
- Blend with 1/2 cup extra virgin olive oil, 1/4 cup sherry vinegar, 2 tbsp lime juice.
- Season with salt and freshly ground pepper.
- Spoon over bowl of the Looseleaf Blend lettuce to taste.
