A hardy perennial in cool climates, horseradish is a Cook's Garden staple like rhubarb. Plant roots in early spring in buried chimney tiles or along the edge of the garden where they will not be disturbed by spring and fall soil prep but can be kept from spreading by mowing. Harvest the second and succeeding springs by digging up part of the patch and removing the main root. Then replant smaller roots. If planted in tiles, just dig up the tile, hose out the soil, remove roots and rebury the tile, filling with rich soil or compost and a few pieces of the old root.
